A healthy, sanity saving breakfast!

It’s morning, the kids (AND hubby) are hungry and you have 15 minutes. Hot breakfast is TOTALLY doable! Grab the following for each person and get ready for a healthy breakfast and happy eaters!

1/2 Tbsp coconut oil

3 organic eggs, scrambled

2 oz cooked, nitrate free ham, chopped

1 cup organic spinach

1 slice organic provolone, Swiss or sharp cheddar, chopped (leave out if dairy free). In a large, enamel or cast iron pan, melt the coconut oil on medium heat. Add the eggs and when those are about half scrambled, add in the ham, spinach and cheese. Stir occasionally, allowing the spinach to wilt and cheese to melt! Happy, healthy breakfast!
